Zucchini Pancakes

 

2 medium zucchini

ľ C flour

1 medium potato

nutmeg to taste

3 eggs

salt and pepper to taste

 

Grate the zucchini and potato medium fine into a mixing bowl.  Squeeze out the excess liquid. 

 

Mix in the eggs, then add the flour, nutmeg, salt and pepper and mix again. 

 

Form the batter into small patties and fry in hot drawn butter.  Use drawn butter; itís important to the flavor.  (To make drawn butter, gently melt butter to separate the milk solids and oil; pour off the clear oil, which floats on top, to use in frying the pancakes.) 

 

An appropriate variation, and the way we made our pancakes, is to add chopped walnuts to the batter.
