Zucchini Bread


Beat 3 eggs and 2 C. sugar to a ribbon; add 1 C. oil and 1 T. vanilla.  Beat until thick.


Add 2 C. grated zucchini (uncooked and drained in towels).  Fold in: (sifted) 2 C. flour, 1 T. cinnamon, 2 tsp. baking soda, 1 tsp. salt, and 1/4 tsp. baking powder. 


Add grated peel of one lemon. 


Place in two loaf pans that have been buttered and floured.  Bake 350 degrees approximately 1 hr.
