Sweet Red or Yellow Pepper Essence


4 to 6 red or yellow bell peppers

C olive oil

C pine nuts

tsp. salt

2 cloves garlic

juice of 1 lemon


Roast, peel and seed the peppers.  In a food processor or blender, grind pine nuts and garlic to a paste, then add peppers, oil, salt and lemon juice.  Process until smooth.  Use as a condiment with broiled chicken or fish, or cooked or raw sliced vegetables.
