Strawberry “Soft Serve” Yogurt


1 qt. Fresh strawberries, rinsed    

1 c. plain low-fat yogurt

½ c. sugar                                         

Several T. skim milk

Juice of one lemon



Halve about half of the berries and combine them with the sugar in a medium non-reactive saucepan.  Bring to a simmer over low heat, stirring occasionally for about 5 min. 


When the sugar has dissolved, transfer the mixture to a food processor, and add the remaining berries.  Process the berries to a smooth purée, then transfer to a shallow bowl and whisk in the lemon juice and the yogurt. 


Place the bowl in the freezer and let the mixture freeze solid, talking the bowl out and stirring it about every 30 min.  When the mixture is solid—3-4 hours—transfer the strawberry ice to the food processor.  Process the mixture in 5-8 second bursts, adding a teaspoon or so of milk at a time to make the mixture smooth.
