Steamed Squash with Ginger and Apple


2 lb winter squash                       

1 quarter-sized sliced

1 apple                                      

fresh ginger

1 T. butter



Trim squash and cut into 1 inch chunks.  Put inch water in steamer. 


Peel apple, putting peels into water.  Cut up apple coarsely and add to water along with ginger and butter.  Bring water to boil. 


Put squash in steamer basket.  Cover and steam until tender (15-20 minutes)  Remove squash and strain liquid into a saucepan pushing some of the pulp through sieve.  Boil steaming liquid until reduced to cup syrup.  Add squash chunks to syrup and reheat.
