Spinach Lasagna

 

8 oz. pkg. lasagna noodles                       

2/3 C onion, minced

6 T. butter                                         

2-4 oz jars pimento strips, divided

8 T flour                                            

2 C ricotta cheese, divided

4 C milk                                            

3 C parmesan cheese, divided

3 C spinach, cooked

 

 

Cook noodles, drain, and cover with cold water. 

 

In saucepan, melt butter, add onions, blend in flour.  Gradually add milk, stir till smooth.  Set aside. 

 

Drain lasagna.  Oil 9 x 13 baking dish.  Layer lasagna, spinach, ricotta, 1 cup parmesan, sauce.  Repeat.  Top with remaining parmesan.  Bake at 350, 45-60 minutes until lightly browned.  Cool 20 minutes before cutting.
