Sugar Snap Peas with Mint

1 lb sugar snap peas




3 T. extra virgin olive oil

1 tsp. salt

2 T. lemon or lime juice

tsp. ground pepper

6 T. mint leaves, chopped



Blanch peas in 2 qt. boiling water for 2 minutes. Drain peas and dunk in ice water to stop the cooking. Drain peas again. Dry peas well with dish towel. Prepare dressing and toss with peas.
