Smothered Okra
½ cup chopped onion |
2 cups sliced okra |
½ cup chopped green pepper |
2 cups chopped, peeled tomatoes |
2 cloves minced garlic |
½ teaspoon salt |
2 Tablespoons butter or olive oil |
1/8 teaspoon pepper |

1/8 teaspoon ground red pepper |
In a large skillet, cook onion, green pepper, garlic in 2 Tablespoons butter or olive oil for about 5 minutes or until tender. Stir in okra, tomatoes, salt, pepper and if desired ground red pepper. Bring to a boil, reduce heat, cover and simmer 20-30 minutes. Serves 4.
