Sautéed Squash


2-3 medium squash (6-8”), zucchini or yellow, sliced

salt to taste

2 T. oil or less (better if part butter)

Parmesan cheese

½ to 1 onion, sliced



Heat oil/butter and add sliced squash in a large skillet.  Cover till browned slightly on bottom (~5 minutes); stir and cover again for 2-3 more minutes. 


Uncover, add onions and seasoning and continue to brown squash and onions, turning as needed.  Serve with Parmesan cheese.
