Roasted Veggie Salad

(Pat Peterson’s potluck dish) - vary vegetables as you wish


1 medium sweet potato, peeled and sliced into 1 inch rounds

1 medium red onion, quartered

Toss with 1 T olive oil, bake on cookie sheet 10-15 minutes at 400°.


1 lg portobello cap or 4 small ones, cleaned gently

Goat cheese log, cut into rounds, dredge in small amount of plain breadcrumbs, put on top of mushroom caps.  Bake 3-5 minutes on cookie sheet, 400°.


Toss all together and serve with vinaigrette dressing-

¼ C olive oil

2 T red wine vinegar

2 tsp Dijon mustard

Combine in small jar, shake well, and drizzle over salad. Season to taste.
