Roasted Red Pepper Mashed Potatoes

3 roasted red peppers

butter, olive oil and/or cream to taste

6 small potatoes, boiled until tender

handful of fresh basil leaves

1-2 cloves garlic

salt and freshly ground black pepper to taste


Combine everything in a food processor fitted with metal blade, and process until almost smooth.  These can also be made by hand if you chop the peppers, garlic and basil leaves.
