Roasted Okra

 

1 pound okra pods

coarse sea salt or kosher salt

2 T. extra virgin olive oil

 

 

Preheat oven to 450 degrees.

 

Lightly oil a large shallow roasting or half sheet pan. Combine the okra and oil in a large bowl and toss to coat. Arrange in a single layer in the pan. Roast for about 15 minutes, until the pods are well browned, shaking the pan occasionally for even cooking.

 

Transfer to a serving bowl. Sprinkle with salt to taste and serve immediately.
