Potato Salad

3 boiled or baked potatoes          

2 T. minced onion

1/3 cup radish, chopped             

1 T. Dijon mustard

1/3 cup mayonnaise (Hellmann’s)         

salt and pepper

3 hard boiled eggs, chopped      

paprika

 

Remove the skin from the potatoes, It is easiest to do this while they are still hot.  Cut the potatoes in chunks and put them in a bowl.  Chop up radishes and add along with the eggs, onions, mustard, pinch of paprika, and salt and pepper to taste.
