Papaya Salsa


small red onion, diced

Juice of 1 lime

2 ripe papayas, peeled, seeded, and diced

2 teaspoons chili sauce

2 cloves garlic, chopped

2 tablespoons vegetable oil

2 teaspoons chopped fresh ginger

teaspoon ground cumin

2 teaspoons chopped fresh basil

Salt and freshly ground black pepper, to taste

cup fresh cilantro



In a medium glass or plastic bowl, mix together the papaya, onion, garlic, ginger, basil, cilantro, chili sauce, and lime juice.  Add the vegetable oil, cumin, salt, and pepper. Toss gently.
