Old Bay Slaw

¾ c.  plain yogurt

6 c. finely shredded green cabbage

¾ c. mayonnaise

½ c. finely diced red onion

1 T. fresh lemon juice, strained

Salt

1 T. Dijon-style mustard

 

4 tsp. sugar

 

2 tsp. Old Bay Seasoning

 

½ tsp. freshly ground black pepper

 

 

In a bowl, whisk together the yogurt, mayonnaise, lemon juice, mustard, sugar, seasoning, and pepper.  In a medium bowl combine the cabbage, onion, and dressing.  Season with salt to taste and adjust the other seasonings.  Refrigerate at least 1 hour.  (Old Bay Seasoning is a crab-boil spice mixture available in fish stores and some gourmet shops—other brands of seafood seasoning can be substituted.)  Variation:  Add 1 ½ pounds shelled and deveined medium shrimp that have been poached for 4 minutes in boiling salted water.
