Okra Casserole

 

˝ cup chopped onion

1 teaspoon salt

˝ cup chopped green pepper

˝ teaspoon pepper

1/3 cup melted butter or olive oil

2 cups chopped tomato

2 tablespoons flour

1 1 /4 cups sliced okra

4 slices cheese

˝ teaspoon dried basil leaves

 

In saucepan, sauté onion and green pepper in butter.  Stir in flour, salt and pepper.  Mix well.  Add tomato, okra and basil. 

 

Spoon mixture lightly into greased 1 ˝ quart baking dish and arrange cheese slices on top.  Bake at 350°F.   for 20-25 minutes or until bubbly.  Serves 6. 

 

This recipe doesn’t specify what kind of cheese, so use your favorite or try bread crumbs instead.
