Marinated Turnips
1 lb. turnips |
2 T. olive oil |
1 ½ tsp. wine or herb vinegar |
1 T. minced shallots |
1 ½ tsp lemon juice |
1 T minced dill or 1 tsp. dried dill |
1 tsp Dijon mustard |
1 T. minced parsley |
Peel and cut turnips into sticks 1/4 inch square. Steam turnips about 10 minutes. Transfer to a large bowl.
In a small bowl, beat vinegar, lemon juice and mustard. Slowly beat in oil. Stir in shallots, dill, and parsley. Pour dressing over hot turnips. Toss gently. Chill before serving.
