Marinated Turnips

 

1 lb. turnips

2 T. olive oil

1 tsp. wine or herb vinegar

1 T. minced shallots           

1 tsp lemon juice

1 T minced dill or 1 tsp. dried dill

1 tsp Dijon mustard

1 T. minced parsley

 

Peel and cut turnips into sticks 1/4 inch square.  Steam turnips about 10 minutes.  Transfer to a large bowl. 

 

In a small bowl, beat vinegar, lemon juice and mustard.  Slowly beat in oil.  Stir in shallots, dill, and parsley.  Pour dressing over hot turnips.  Toss gently.  Chill before serving.
