Lynn’s Flaming Glazed Baby Carrots


2 cups baby carrots, whole or julienned

salt and freshly ground black pepper to taste

˝ cup butter

˝ cup cognac or brandy

1 teaspoon dried thyme, or to taste



Steam or microwave carrots until they are tender-crisp.


Melt butter in a medium skillet.  Add carrots, thyme and salt and freshly ground black pepper to taste and sauté for about two minutes, until carrots are glazed and cooked to the degree you like them.  Remove them from the heat and place in a serving dish.


Pour the cognac or brandy into a flame-proof container.  Bring the carrots, the liquor, and some matches to the table when you are ready to serve them.


Light the match and hold it above the liquor until it ignites.  Pour the flaming liquid over the carrots and serve immediately.
