Grilled Tomatoes with Basil and Parmesan

 

1 garlic clove, minced, crushed to a paste

1 Tablespoon extra-virgin olive oil

1/4 cup finely grated Parmesan

2 large tomatoes, cut in half crosswise, seeds squeezed out

20 basil leaves, chopped

salt and freshly ground black pepper to taste

 

In a small bowl, combine the garlic paste, basil, olive oil and cheese and spoon the mixture into the tomato halves, fitting it into the little openings where there were once seeds. 

 

Grill the tomatoes, flat side up, on a hot grill for 15-20 minutes or until they soften and you see them bubbling.  You can also bake them in a 400F. oven for 40 minutes.  Season with salt and freshly ground black pepper to taste and serve immediately.
