Green Beans with Caramelized Onions

 

1 lb green beans, fresh

1 large onion, sliced

1 T. olive oil  

salt and pepper to taste

 

Caramelize onion in a skillet in olive oil, by cooking gently over low heat until onions turn lightly brown, about 20 minutes. 

 

Meanwhile, cook green beans by plunging them in a large pot of salted boiling water for 2-3 minutes, just until tender-crisp. 

 

Add green beans to the caramelized onion, cover and remove from heat to steam for about 2 minutes more.  Salt and pepper to taste.
