Green Bean and Red Bell Pepper Vinaigrette

(Recipes From a Kitchen Garden)

 

2 C fresh green beans, trimmed, blanched

pinch sugar

2 red bell peppers, thinly sliced

2 T. water

tsp. chopped scallions

salt and pepper to taste

1/3 C sherry wine vinegar

c. vegetable oil

 

Toss all the above ingredients together and chill one hour before serving to blend the flavors.
