Green and Red Tomato Salad

Dressing: 

 

1 large clove garlic, finely chopped

3 T. wine vinegar

2 T. lemon juice

c. olive oil

tsp. salt

tsp. ground cumin

1/8 tsp. freshly ground pepper

 

 

 

Vegetables:

 

3 large green tomatoes

3 large red-ripe tomatoes

1 medium red onion

3 T. coarsely chopped fresh basil

 

Thoroughly combine all dressing ingredients.  Set aside. 

 

Cube tomatoes.  Cut onion into thin slices and separate into rings.  Combine tomatoes and onions in a salad bowl with the chopped basil.  Add dressing and toss.  Let sit about hour to blend flavors.  Serves 6.
