Edamame Salad

3 c. cooked and shelled edamame beans

5 Tablespoons fresh cilantro, chopped or

(could substitute black beans) drained

1 teaspoon ground coriander

1 red pepper, diced into 1/4 inch pieces

1 teaspoon ground black pepper

2 large tomatoes, diced into 1/4 inch

teaspoon salt

pieces

4 scallions, chopped

 

 

Dressing

 

2 Tablespoons lemon juice

2 Tablespoons olive oil

 

Gently toss all ingredients.  Add dressing.
