3 c. cooked and shelled edamame beans |
5 Tablespoons fresh cilantro, chopped or |
(could substitute black beans) drained |
1 teaspoon ground coriander |
1 red pepper, diced into 1/4 inch pieces |
1 teaspoon ground black pepper |
2 large tomatoes, diced into 1/4 inch |
½ teaspoon salt |

4 scallions, chopped |

Dressing |

2 Tablespoons lemon juice |
2 Tablespoons olive oil |
Gently toss all ingredients. Add dressing.
