Dry Okra


1 lb okra

tsp cumin seed

8 T vegetable oil

tsp salt

6-7 onions, chopped

tsp ground cumin

tsp ground coriander

1 tsp lemon juice

1/8 to tsp cayenne pepper (optional)



Wash okra and pat dry.  Cut off the very tip of each okra pod and cut them into inch rounds. 


Heat the oil in a large frying pan over medium-high heat.  When hot, put in cumin seeds and let them sizzle for 10 seconds. 


Put in onions and okra, spreading out evenly in the pan.  Fry, stirring now and then, for 10 minutes, spreading the okra out evenly in the pan each time you stir.  When onions begin to brown, turn heat to medium and continue as you stir and fry for another 5 minutes.  Be gentle as you stir. 


Put in salt, ground cumin, and coriander, lemon juice and cayenne.  Cook for another 5 minutes, stirring or tossing gently.
