Cold Cucumber Soup

 

2 small garlic cloves, peeled and crushed

C. fresh mint leaves

tsp. salt     

1 T. red-wine vinegar

3 cucumbers, peeled and chopped

2 ice cubes

1 C. buttermilk

Pepper to taste

 

Place all ingredients (except C cucumbers) into a blender.  Blend the mixture well and season with the pepper.  Garnish with remaining cucumbers and a few springs of mint.
