Carrot and Parsley Salad

(from Moosewood Restaurant Cooks at Home)

 

3 c grated carrots

c vegetable oil

1 bunch parsley, finely chopped

tsp salt

1 garlic clove, minced or pressed

freshly ground pepper

3 T fresh lemon juice

 

 

Toss all ingredients in a serving bowl.  Chill.  Variations: Add 1 T chopped fresh mint or chives or 1 tsp cumin.
