Bok Choy Soup

(The Good-for-You Garlic Cookbook)


1 tsp. butter

8 C chicken broth or vegetable stock

2 tsp. dried chervil (optional)

3 oz. dry vermicelli

C minced leek or onion

4 baby bok choy, thinly sliced

2 tsp. dried marjoram

salt and pepper

4 garlic cloves, minced

2 large potatoes, peeled and diced

1 carrot, peeled and grated





Place butter and C water in soup pot;  add leeks and garlic and cook slowly until beginning to brown.  Add bok choy, chicken broth and 2 cups water; bring to boil.  


Add potatoes, optional chervil, marjoram, and carrots.  Simmer 25 minutes. 


Add vermicelli;  cook 10 minutes.  Add salt and pepper to taste.  Eight servings.
