Basic Miso Soup

 

1 onion, thinly sliced                   

˝ tsp. fresh ginger, grated

1 T. safflower oil                         

2 T. miso

4 c vegetable stock                     

˝ lb. tofu, drained and cubed

green onions, sliced

 

 

Sauté onion in oil.  Add ginger, tofu, and stock.  Cover and simmer for 5 minutes.  Dissolve miso in broth and add to stock.  Bring to simmer and serve with green onions as garnish.  Serves 4.
